Chicken Parmesan Party

Everyone has those recipes where they don't even have to look at the instructions anymore to get the job done. In my case, I stopped looking at the instructions a looooong time ago because it became such a favorite in my family. This particular instance was a request for a small birthday dinner at my grandparents, hence the paper plates because we were all too lazy to clean up the real ones (no disrespect, grandma, I blame mom). 

 

The below photos and ingredients list is for a party, and thus shot guerilla style, but you can easily adjust to create a smaller meal depending on servings or available ingredients. 

 

 

*Clearly I was way too excited to eat before I remembered to take a picture of the finished product, sorry y'all! Also, dig that fancy plate? You can find them at this fancy department store called 'Dollar Tree'. 

 

Ingredients:

 

- 1 container of breadcrumbs (I personally use the Italian mix of whatever brand is on sale, but I did not use them it time around so the color is WAY lighter than they usually are)

- 2 eggs

- 1 package of Italian style mix cheese

- 1 can of tomato sauce (8 to 15 oz depending on how much you are making, I used a good amount of my 15 oz can)

- 1 family style package of boneless, skinless chicken breasts, cut lengthwise in half to make 10 pieces total

 

 

Method: 

 

1. After prepping your chicken, create your breading station by using one plate for your 2 eggs, add a pinch of salt and pepper, and one plate for your breadcrumbs, about 1 1/2 cups to start off with. 

 

2. Before getting started, pre-heat your oven to 400 degrees so you can work while it's getting ready. Dredge your individual breasts in the egg mixture first, shaking off excess egg, and then in your breadcrumbs, making sure to fully coat every spot. 

 

 

 

 3. After repeating this process for all of your chicken, place onto a baking sheet or in a baking dish and cook your chicken for 20 minutes. 

 

4. After your 20 minutes are up, pull out your chicken and spoon out a few teaspoons of sauce directly onto your chicken (but don't over do it, a little goes a long way). Sprinkle your cheese on top and place back into the oven until cheese has melted (between 2-4 minutes). 

 

 

 

5. You're done! You have successfully created a meal large enough to feed a horde of people (or in my family's case, 6 people). We served ours up with a side of spaghetti and garlic bread to keep things simple.
